FOOD !


So here is a little recipe that I have in use quite often :)
Aubergine; egg plant; brinjal

1 aubergine 500g-800g
3 cloves of garlic
onion (tennis ball size or equivalent in smaller size ;)
1 table spoon of sesame
2 chilies (preferably fresh, but powder will do)
1 mounted tea spoon garam masala
½ tea spoon black pepper powder
(optionally you can use basil fresh or dry)
salt to taste

Bake it in the oven for 50min-60min at 180-200°C (depends how strong your oven is)

Let it cool down. Later peel it, if it was backed enough the skin will come of very easily (careful not to burn

yourself ;). Sometimes it is easy to cut is in half first and then stat peeling.

After you peel dice it (you can chose you personal favor cut ;)

Heat up olive oil on a non-stick pan. Fry the sesame seeds, after it cracked nicely add onion (be careful not to burn the sesame seeds) . Fry onion till soft and translucent, add mashed garlic, reduce heat/flame. Fry shortly add spices (chopped chilies, garam masala, black pepper, salt, and basil). Fry with spices for about 30s-1min, add the chopped aubergine. Fry everything for at least few min (till you will feel the nice smell). After that there are two ways , some like it dry some not. If you like dry fry it for a while till aubergine picks up some golden shades. If you like it saucy then add about 300ml of water (about 1 and ½ glasses), cover it up and cook for another 10-15min. you can thicken it up with some flour if you want.
